Portobello Mushroom “Pizza”

Do you love pizza? Who doesn’t! Sadly, eating pizza all the time is not good for us, so, I have come up with this great alternative recipe. Portobello mushrooms have a really meaty texture (well, as close to meat you can get with it being a vegetable) and you save all the calories of not having a flour base that you can use on a nice cheese. Give it a go!

 

 

 

 

Serves 2 – 450 Calories per serving

Ingredients

- 4 portobello mushroom caps

- 100g feta cheese

- 1 bag of spinach

- 12 tbsp marinara

- 360g new potatoes

 

1) Start cooking the new potatoes

2) Put the portobello mushroom caps in the over for 10 minutes

 

 

 

 

 

 

 

 

3) Cook the spinach and put to one side until needed

4) Put 3 tbsp of marinara on each mushroom cap

 

 

 

 

 

 

 

 

5) Add a quarter of the spinach to each mushroom cap

 

 

 

 

 

 

 

 

6) Add a quarter of the feta to each of the mushroom caps

 

 

 

 

 

 

 

 

7) Cook in the oven at 200C for 15 minutes

8) Serve with new potatoes and salad
