Chipotle Prawn Soft Tacos

I love Mexican food! It is quite possibly my favourite type of food and it can be really healthy providing you don’t cook with lots of oil and you avoid the cheese and sour cream. It can still taste great without those things, it is all about getting the flavouring right.

In our house, we have Mexican Mondays. Yup, you guessed it, every Monday we eat Mexican food, although, we sometimes eat is on other days as well, just because we can’t wait a whole week. So expect lots of Mexican recipes on the website!

 

Serves 2 (3 tacos each) – 450 calories per serving

Ingredients

- 6 soft tacos

- 2 Peppers, thinly sliced

- 1 Avocado, thinly sliced

- Salsa

- 200g King Prawns (You could also use chicken breast or Quorn if you don’t like prawns)

- 2 tsp Chipotle chili flakes (use chili powder if you can’t find this)

- 1/2 tsp cumin

- Salad

 

1) Spray the prawns with some fry-light and sprinkle over the chipotle and cumin. Stir and leave for 5 minutes

 

 

 

 

 

 

 

 

2) Cook the peppers and courgettes in some fry-light for 10 minutes, until softened (alternatively, you could roast them in the over for 20-30 minutes, which tastes great too)

 

 

 

 

 

 

 

 

3) Puree the avocado

4) Cook the prawns on a George Foreman (or under the grill) for 5 minutes

 

 

 

 

 

 

 

 

5) Heat a small frying pan (NO OIL) and dry fry the corn tortillas for 1 minute each side

 

 

 

 

 

 

 

 

6) Serve everything up and build your soft taco by putting in some pureed avocado, then some vegetables, then some prawns and top it with some salsa. Serve with a big salad.
