Egg Nests

Bored of just dipping slices of bread into your soup? What something a little bit different? What to add some protein to the meal? Well, these egg nests tick all those boxes and are a perfect accompaniment to a hearty soup. I would recommend an asparagus soup.
Serves 1
Ingredients:
- 1 slice of brown bread
- 1 egg
- 1 mushroom, finely chopped
- 1 clove of garlic, minced
- 1 table spoon parsley, chopped
1) Take the slice of bread and roll it flat with a rolling pin. Use the flattened slice of bread to line a small ramekin.

2) Put the mushroom, garlic and parsley on top of the bread.

3) Crack an egg on top of it.

4) Bake at 200C for 20 minutes, or until the egg sets
