Prawn, Tomato and Coconut Curry

Serves 2
Ingredients
- 250g King Prawns, defrosted
- 1 large onion, chopped
- 8 mushrooms, chopped
- 2 cloves of garlic, crushed
- 500g tomatoes, quartered
- 4tbsp desiccated coconut
- 1 small pack of green beans
- 1 tbsp garam masala
- 1 tsp chilli powder (more if you like it spicier)
- 1 tsp ground coriander
- 1 tsp cumin
- 1 tsp mustard seeds
- 1 tbsp fresh coriander
1) Put the mustard seeds in a pestle and mortar and crush. Then add the garam masala, chili powder, ground coriander and cumin.

2) Heat some spray oil in a large pan and add the onions, garlic and mushrooms and cook for 3 minutes. Boil the green beans at the same time.

3) Add the tomatoes to the mushrooms and add the spices and fresh coriander. Cook for 20 minutes.

4) Add the prawns.

5) Add the green beans.

6) Add the coconut and stir and cook for 5 minutes.

7) Serve with brown rice.
