Cocoaty snack balls

I am not sure cocoaty is a word, but I think it should be now, seeing as coconut and oats go so well together.
I made these whilst experimenting with my eternal quest for healthier things to snack on, that satisfy my sweet tooth. I kind of just threw a load of things I had in my kitchen together to see what happened and they turned out really great. They are a little chewy, which I love, and they can be adapted so much that they could take on lots of great flavours. I have one of these as a post workout snack, along with a banana.
Ingredients:
- 100g porridge oats
- 50g almonds
- 25g desiccated coconut
- 1 tsp ground ginger
- 2 tbsp almond butter
- 2 tbsp apple puree
- 1 tbsp honey/agave
1) Put the oats and almonds in a blender and blend.

2) Pour into a bowl and add the coconut and ginger.

3) Add the rest of the ingredients and mix well.

4) Make into mini balls and put in the fridge for an hour so they harden up.


Oh stop tempting me … I’ve also got a sweet tooth and these sound perfect!! Another yummy to try AND the bonus is its bakeless!! Woot woot

I’m going to make these again this weekend. They keep in the fridge for ages. Well, at least, I was eating them 6 days later!
