Banana Soft Serve

Another beautiful day and the sun is shining. Our house is over looked by this huge church – so when the sun is shining and the clouds are whispy like today, it makes for a great photo. Whispy is a word isn’t it?

 

 

Seeing as one of the things on my Summer Bucket List was to read more – I thought I should start actually doing it. Being a food/health/fitness blogger – of course those books have to be food related. I do have other books – honest, but I got some great books for my birthday that I wanted to start on.

The first one was The Flavour Thesaurus. It basically tells you what flavours go with what. Have you ever wondered what herbs compliment what meat/fish/vegetable? Then this is the book for you. It has different sections for different foods and then it lists things that compliment that food and gives you meal ideas too. There is no section for bacon – but I figured that is because bacon goes with everything!

 

 

Today’s salad was lemon chicken. As always, a base of mixed greens, topped with cucumber, radish, red onion, green olives, roasted tomatoes, crushed roasted garlic new potatoes, a little feta and chicken strips. The chicken was marinaded in olive oil, lemon juice, garlic, basil and chilli flakes and then grilled. This was all topped off with more lemon juice and some cracked black pepper and sprinkled with basil and cress.

 

 

With it being so hot, I have been drinking more water than usual. Trying to come up with new ways of getting my water in, that add a bit of flavour. So I decided to make up a teapigs super fruit tea and let it go cold, pour it into a large glass with some more cold water and ice. It is the perfect alternative to sugar fruit drinks. And no, the sugar free ones are not any better for you. You can try it with any fruit tea, but the teapigs one is really flavourful.

I then moved onto the next book to flick through in the garden – the Green and Blacks Chocolate Recipes cookbook. I swear I gained about 10lbs just looking at the pictures. There are so many amazing desserts to drool over. Will I be baking them all? No. I am trying to maintain my weight loss – not put it back on. But that doesn’t mean it is not a great book. I am going to use all the amazing recipes as a guide and make healthy alternatives to them. I can’t wait to get started on that.

 

Green and Black Chocolate cookbook

 

Okay, okay – you are really here for the banana soft serve recipe – not a book club. I hear ya’ – so here it is. You will not regret making this. It is an amazing and healthy alternative to ice cream.

 

 

Ingredients:

- 2 bananas

- Half a tub of Greek yoghurt (I used 2% – but you can use any) – about 250g/8oz

- 1 tbsp nut butter

 

1) Mash all of the ingredients together and put in a freezable pot.

2) Freeze for a couple of hours, then take out, stir and put back in the freezer for another hour or so. These are general guidelines for freezing times, as it has taken different amounts of times each time I have done it. Keep checking it and see how it is getting on.

3) Take out of the freezer, allow to defrost for a few minutes, stir and serve with cherries.

my favourite ice cream is connoisseur caramel honey macadamia ice cream … ~smling .. I’ve been avoiding it for so long that on christmas day it was in my freezer … family decided I needed a treat …
