This is not just any chicken burger, this is a juicy, Cajun spiced chicken burger. It doesn’t stop there either. This burger is topped with a full of flavour avocado salsa that compliments it perfectly and is served with chunky oven baked fries.
You may have noticed I make quite a lot of burgers. They are probably the “junk” food I crave the most and they are responsible for why I was so overweight in the first place. I would eat processed frozen burgers in the past, but now I make everything from scratch using the best ingredients. There is nothing junk about the burgers I make and eat now.
I shall be making these a lot more over the coming months, as they would be a perfect addition to any BBQ.
Serves 4
Ingredients:
- 4 potatoes, washed and skins left on
- A pinch of rock salt and cracked pepper
- 4 bread rolls
- 2 chicken breasts, chopped into chunks
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 2 tbsp fresh coriander, chopped
- 2 tbsp jalapeños, chopped
- Half a beaten egg
- 1 avocado, chopped
- 4 tomatoes, chopped
- Half a red onion, chopped
- 2 tbsp fresh coriander, chopped
- Juice of 1 lime
- 1 tbsp olive oil
1) Keeping the skins on, chop the potatoes into chunky fries and put into a pan of boiling water for 7 minutes.
2) Drain the potatoes and put in a roasting tin, spray with oil and sprinkle over a little rock salt and cracked pepper. Bake for 40-50 minutes, until crispy.
3) Whilst the fries are cooking, place the chopped chicken breasts in a blender and blend until ground.
4) Put the chicken in a bowl with the cumin, paprika, ground coriander, 2 tbsp fresh coriander and jalapeños and add the egg.
5) Stir the mixture and form into 4 burger patties.
6) Prepare the avocado salsa by stirring together the avocado, tomato, red onion, fresh coriander, olive oil and lime juice.
7) 10 minutes before the fries are ready, cook the burgers on a George Foreman grill. If you don’t have one of these, cook for around 10 minutes each side on a griddle. Alternatively, you could oven or grill them. Place the burger on a bread roll and top with the avocado salsa and then serve with the fries.
