Chocolate Banana Pops

As the warm weather approaches, a lot of us will have ice cream on the brain. Whilst I am all for enjoying the things you want in moderation (yes, even ice cream), if you are really trying to keep your diet in check or if you have had a particularly heavy day but still want something sweet, then this is for you.

It tastes just like a chocolate ice cream bar and it is hard to tell the difference. The great thing about them is that you can top them with almost anything, but I went with shredded coconut and crushed almonds on mine.

Try to use the best quality dark chocolate you can get/afford.

These are also great to get kids involved with, as they will love making them.

Ingredients – serves 2:

- 2 bananas

- 100g/7 oz dark chocolate

- shredded coconut

- crushed almonds

1) Slice the bananas into thick slices and put a cocktail stick in each one.

2) Melt the chocolate and then quickly roll the banana slices one at a time in the melted chocolate (holding onto the stick) and then straight into the crushed almonds or coconut or topping of your choice. Do this quickly, so the chocolate doesn’t start to set. Put into the freezer for a few hours.

The perfect lightened up summer treat.
