Sure, this might not be the most complicated recipe in the world, but sometimes the most delicious things are the simplest! Porridge is such a staple in so many households, but most of us tend to get stuck in a rut with the same old toppings. So, we are here to help you with that dilemma! Until the warmer months arrive, we will be sharing our favourite porridge recipes.
We have been enjoying some beautiful winter weather recently – crisp cold air and bright blue skies! It’s the perfect weather for going for a walk, so we have been making the most of it and heading out in to the countryside. We went to the stunning Lyme Park at the weekend, and whilst we didn’t manage to spot any deer this time, we did get to spend lots of time outside, getting plenty of vitamin D and burning off the calories of the cake we were going to enjoy later that day.
A winter’s day walk means a hearty and warming breakfast before you even head out the door. This breakfast ticks that box. You have protein from the nuts and milk, a serving of fruit, oats to give you energy and a little hit of chocolate to make it feel much more indulgent than it actually is. What more could you want from a breakfast to set you up for a day in the English countryside?
Dannii has travelled extensively around the U.S (31 States and counting), but one she hasn’t been to is Vermont and she is pretty gutted about that because it’s a bit of a dream to go to the Ben and Jerry’s factory. Without being a total cliche, a tub of ice cream is our go-to when we need a pick-me-up and in moderation there is nothing wrong with that. Sadly, moderation isn’t always our strong point, so we try to find ways to get all the flavour of our favourite foods, without all of the calories. So that’s how we came up with this breakfast.
We promise to share some more savoury breakfast options soon, but getting out of bed after being woken up 12 times in the nights is getting increasingly difficult. With both of us having a sweet tooth, this is the kind of thing that will get us out of bed and ready to function for the rest of the day.
You could easily add some ground ginger or cinnamon to this, or add some different fruit if it needs using up. You could just go all our crazy and use a mixture of nuts rather than just peanuts. I think a combination of walnuts and pecans would go down well, due to their texture. As with all our recipes, feel free to adapt to suit all tastes. You can just make the basic chocolate porridge, and let everyone add their own toppings.
Chunky Monkey Porridge Ingredients – Serves 2:
– 60g oats/ 0.6 Cup (I use rolled oats)
– 350ml/ 1.5 Cup cashew milk
– 4 tbsp cocoa powder
– 2 tbsp pure maple syrup
– 1 banana, sliced
– 20 peanuts, chopped
1) Put the oats and milk in a pan and bring to the boil. Simmer for around 4 minutes, until starting to thicken.
2) Add the cocoa powder and maple syrup and mix well. Simmer for 1-2 minutes.
3) Finally, divide between bowls and top with the sliced banana and peanuts.
