A little bit of pesto adds so much flavour to a sandwich and it compliments the Leerdammer cheese perfectly. Walnuts add an extra crunchy texture to take it to a new level.

The cheese is still flowing here in Switzerland (follow me on Instagram for my Switzerland updates) and I have another delicious cheesy sandwich to share with you are part of my Leerdammer blogger challenge to come up with 5 new sandwich recipes to make lunch time more exciting. Today we are mixing it up a bit and moving away from sliced bread and using a ciabatta roll. I never knew that Tesco did gluten free ciabatta rolls, but they are really good.

Sandwiches don’t get much more simple that this, which is why a slice of Leerdammer light is the perfect addition. It is ready sliced and just takes seconds to add, meaning the whole ciabatta is ready in just 2 minutes. Who knew that walnuts would be so good in a sandwich? Which is why I am loving the Leerdammer challenge so much, as I am using ingredients in sandwiches that I wouldn’t have done before. The texture is a nice addition and it cuts through the cheese and pesto.
Ingredients – Serves 2:
– 2 ciabatta rolls
– 2 slices of Leerdammer light
– 2 tbsp pesto
– 2 tbsp chilli chutney
– 4 walnut halves, crumbled
– 2 handfuls of rocket lettuce
1) Spread the pesto on one side of the ciabatta and the chutney on the other.
2) Add a slice of Leerdammer Light cheese to the pesto, crumble the walnuts on top and add the rocket.
