Egg Boat

 

I really think I have a bit of an obsession with baking eggs in things at the moment – it’s just a fun way to eat your eggs. This recipe is kind of a combination of the egg nests and the frittata.

The theme of the week seems to be versatility and these definitely fall into that category. Add whatever you want to these, and use it as an opportunity to use whatever you have left over in your fridge.

 

 

Ingredients – serves 4 (serve with a bowl of fruit for a filling breakfast):

- 4 eggs

- 4 whole wheat rolls

- 30g cheddar, chopped

- 1 slice of turkey bacon, chopped

- 1 tomato, chopped

- 1 tbsp parsley, chopped

 

1) Whisk together the eggs and then add the other ingredients and stir.

2) Hollow out a hole in your rolls and pour the egg mixture into.

3) Bake at 180C/350F for 20 minutes, until the eggs are set.

Fat: 12.5

Carbs: 27

Protein: 15

Fibre: 2

    These would be nice for lunch as well, with a salad maybe. I would leave out the bacon though as I am a vegetarian. I couple put some fake bacon in it.

  11. Haha, you do seem a bit obsessed with cooking eggs in bread or avocados. Nothing wrong with that though! I love that this is like an omelette in bread. Great idea!
