Okay, so this is a bit late, as it is Tuesday, but these were too good to wait until Friday to post about.
Today was my monthly trip to the Asian supermarket to stock up on noodles and miso etc and I thought I would look at what other noodles they had to offer, instead of just getting the usual wheat and buckwheat ones I normally get. I came across these sweet potato noodles.
Well, I love sweet potatoes and I love noodles – what could go wrong. Nothing. Nothing could go wrong – they are amazing. They taste just like regular noodles, even have the same consistency, but have a slight sweeter taste.
These Korean noodles that are made from the starch of a sweet potato and can be used in the same way you would use any other noodle and they taste great in soups and stir-fries.
If you are calorie counting, they have around 170 calories per 50g of noodles. They are high in carbohydrates, but if you have learned anything about me from this blog, it is that I love carbs and think they are very important for the body.
I used them in the Miso Noodle dish.
Take a trip to your local Asian supermarket and see if they have them in stock. If not, they might order them in for you.
