Friday Favourites – Creamy Avocado Pasta and My First Ever Race

Favourite Meal:

This is a tough one as I have had some great meals this week, but most of them are being kept “secret” at the moment to share for future recipes, like a recipe for thai salmon and sweet potato skewers. But if I had to pick, my favourite meal from this week was one of my favourite recipes – creamy avocado pasta. Why did I enjoy it so much this week when I have it most weeks? Look at the amount of feta on it….mmmmmm feta.

Favourite Sausage:

I have a favourite sausage from the week? I sure do! When I was a vegetarian, I ate a lot of meat substitutes and that meant a LOT of Quorn sausages, but what they lacked was vegetables. I love sausages, especially in the winter in a casserole, but they are also a staple at Summer BBQs too. Regular sausages can be so full of fat, which is obviously fine once in a while, that it made a nice change to find veggie sausages that are packed full of goodness and actually taste good.
I got to try Secret Sausages this week and was really impressed with the ingredients list. They have 90% less fat, 50% fewer calories and 35% less salt than normal sausages. My favourite flavour was the chilli and coriander, but closely followed by the Honey Bee. They have some garlic and rosemary ones that I really want to try too.

Favourite Quote:

I used to be, and sometimes still am, the worst for doubting myself. I always used to tell myself that I couldn’t do something, so I never even tried. That all changed when despite telling myself that I would never be able to lose such a large amount of weight, I tried anyway, because that was all I could do. I took it one day at a time and reached my goal and surprised myself, and everyone that doubted me. We are all capable of doing far more than we give ourselves credit for. So, try doing something you have told yourself that you can’t do. You might just surprise yourself.

Favourite Tea Accessory:

My love for tea has gone way beyond buying every kind of new flavour of tea that there is, I am now starting to collect tea accessories like quirky cups, boxes to store my tea in, loose leaf dunkers (infusers would be the “posh” name) and now this awesome tea glass.

Libra Tea Glasses are eco friendly bottles to help you enjoy tea on the go. You know how everyone carries around those Starbucks insulators for their coffee, well this is the same, but for tea lovers. The glasses are thermal and have a glass interior, a durable poly exterior and removable tea filter, making it perfect for loose tea leaves. Did you know,  loose tea can be re-steeped multiple times giving you more value for your money – green teas can be steeped 2-3 times, oolong often up to 5 times, even black    tea can be steeped at least 2 times – making loose leaf tea very economical.

Favourite Exciting Moment:

I have signed up for my first ever race and my race number came through this week. I am nervous, as I still can’t run 5km continuously, but it is for an amazing cause and I will just do running/walking intervals if I have to. It is not until 12th July, so I have some time to train still. I am just excited to take part and for it to be my first race (I hear they are addictive) and as long as I cross the finish line, that is all that matters.

If you want to, and it would be AMAZING if you could, you can donate to sponsor me HERE. I am raising money for Cancer Research. I am already 68% towards my goal of raising £500, so anything you can donate, even £1/$1 would be VERY gratefully received.

Yep, races are incredibly addictive! So exciting that you’re signed up for your first one.
I’ve not tried Secret Sausages before, but the butchers close to my parents do an amazing pork and leek sausage…yum! :)

I love that quote too – however I need to put it into action. I really, really need to lose about 3 stone, even my doctor had said at a minimum I should lose 1 stone. I know what foods are good for me, I’m a capable cook, but I get bored easily and always fall of the wagon withing 2 weeks. When I’m organised, have meals planned and go to the gym I am a power house and enjoy all, but it then it takes one, just one slip up and I’m derailed again.

I think this is why I’m enjoying your blog so much. Your recipes are full of good healthy food, balanced meals with cheese!!! Mmmm feta!!!

How exciting about your race number arriving! I think you may surprise yourself too! WHen I did my first race for life I had run 15 min, then a walk break, then another 15 mins, but I really wanted to run the whole way, and did. I think a lot of running is in the mind, so if you convince yourself you can do it, then you will. But of course it is for a great cause so just enjoy the day!
I love avocado pasta- Oh She Glows has the most amazing recipe for it- how can something so simple taste so delicious ?

That is what my recipe is inspired by :)
I hope that is what happens with my race too, hoping I just get caught up in the moment and run it all without stopping.

Reading about the different sausages reminded of a time when I lived in Germany. A friend’s father wanted me to sample all their different sausages!! It put me off sausages for life! Interesting about the libra tea glasses! I’m a real tea lover so I may give these a go. Well done you for entering a race, rather you than me! I wish you all the best with it.

  5. Jaime says

That is one of my favourite quotes. We should all try pushing our boundaries, as we never know what we might be able to do.

  6. Bea says

I am loving the sound of that pasta. What kind of pasta do you usually buy? Or do you make your own?

    • Dannii says

We sometimes make our own if we have enough time, but we always have wholewheat pasta in the cupboard and use that if short on time.

  7. Cara says

Where can I buy those sausages from? I have some veggie friends, so it would be nice to give them something a little more interesting than plain quorn sausages when they come over for a BBQ.

  8. Nadine says

I love your avocado pasta recipe. We have it once a week and it is really good cold the next day as well. My husband even takes some to work.

  9. Gemma says

The best part of my week was this morning when I went for a really long walk with my dog in the countryside. I thought I should make the most of the nice weather.

  10. Mark says

I haven’t heard of those sausages before. I am trying to eat more vegetarian meals, but I want to avoid quorn because it is pretty processed. Thanks for the tip!

  11. Aoife says

I did race for life last year and it was such an amazing experience. Everyone has a story of why they are running and it is quite emotional. Make sure you blog about it after to let us all know how you got on :)

    • Dannii says

I think that is one of the main things I am looking forward too, the overall experience and the atmosphere.

  12. Fiona G says

That avocado pasta looks amazing, especially with all the feta. Is it kind of like guacamole on pasta? Great idea!
