Now, this is a super simple recipe, but sometimes they are the best ones I think. You just have one main ingredient, the potatoes, and then you let all the other extra flavours shine, like the lemon, garlic and herbs. We are all about the fresh herbs at the moment and this dish needs tons of parsley. It’s a must!
Are you all enjoying lots of BBQs and eating al fresco? I must admit, we are not having as many BBQs as we would like (thanks erratic weather and work schedules), but we are trying to set aside time to spend with friends and family, eating good food, because what’s the point of working so hard that you don’t get to enjoy life too?
I have been thinking a lot about a work/life balance recently, as with Dave working from home now it is even more hard to find that balance as we can spend some days doing nothing and other days working until midnight. But that isn’t good for either of us, so we are working on that balance in a bid to be kind to ourselves.
Being kind to myself has been my focus this year as I work with Weight Watchers to promote their #WomanKind project. I never post about things I don’t 100% believe in, or wouldn’t use myself, but this has been one of my favourite campaigns to work on this year because it’s something so relevant to myself. I spent years punishing my body with bad diets and crazy exercise regimes or working too hard and now having enough down time, that now is the time that I am kind to my body, and that means finding that work/life balance and enjoying time for BBQs. Plus, more BBQs means more side dishes like this.
I know some of you aren’t as crazy about garlic as I am (if you are new to my blog, I am really crazy about garlic!), then you might want to tone down the garlic a bit. But, I think 1 clove of garlic per person is good, they are meant to be garlicy after all.
Lemon, Garlic and Herb Roasted Mini Potatoes Ingredients – Serves 4:
– 1 kg baby potatoes, halved
– 2 tbsp olive oil
– Juice and zest of 1 lemon
– 4 garlic cloves, crushed
– Half a bunch of fresh parsley, finely chopped
– A pinch of sea salt and black pepper
1) Firstly, add the potatoes to a pan of boiling water and simmer for 12 minutes and drain well.
2) Put the potatoes in a bowl with the rest of the ingredients and mix well.
3) Finally, put in a preheated oven at 200C for 35-40 minutes.
