Lasagna is probably the ultimate comfort food and always a family favourite. Why not make these Mini Vegetable Lasagnas instead of a big pan of it and have little delicious bite sizes lasagnas for dinner?

The great thing about these, as we try to do with all our recipes, is that they are easily adaptable. We have done vegetarian ones, but you could easily add meat to them, or do half an half. If you really wanted to, and had the time, you could do a few different flavours.
What I love about anything that is assembled like these, is that it makes them perfect for kids to help make. Once all the ingredients are chopped up and the lasagna sheets are in the pan, little hands can help to add all the toppings. We are already getting a back catalogue of recipes ready for Avery to help with. At the moment her dexterity of far from where it needs to be to help in the kitchen.
These really couldn’t be any simpler and that is partly because of the Circulon Muffin Tin that it is cooked in. There is seriously so much that you can do with a muffin tin. Much more than muffins! We have been loving coming up with new ways to use it to create little bite sized meals. With a baby going through a growth spurt and feeding constantly, Dannii needs meals that she can eat with one hand. So look out for more bite sized recipes on the blog.
Mini Vegetable Lasagnas Ingredients – Makes 12:
– 6 fresh lasagna sheets
– 12 tbsp marinara
– 6 mushrooms, diced
– 6 artichoke hearts
– A handful of spinach, finely chopped
– 40g mature cheddar
1) Firstly, cook the lasagna sheets in boiling water for 3 minutes. Once cooked, drain and cut the sheets into quarters, making 24 squares.
2) Place 2 lasagna squares into each of the muffin tin cups.
3) Fill each lasagna cup with marinara, mushrooms, spinach, artichokes and top with cheese
4) Finally, bake for 12 minutes at 200°C
