“If you like piña coladas, and getting caught in the rain”. Have you got that song stuck in your head now? Welcome to the club! Well, I DO like piña coladas, but apparently it isn’t acceptable to drink them on a Monday morning. It is now! We bring you a smoothie that has all the delicious pineapple and creamy coconut flavour of a piña colada, but none of the alcohol. Feel free to make an adult version with some rum in!
Coconut milk is fairly high in calories and fat, but totally fine as part of a balanced diet, and I think that is what really makes the recipe. You could always make it lighter by using coconut water, but you wouldn’t get the creaminess and thickness that makes this smoothie so great – but at least you have options.
We make a lot of smoothies in our house. They are quick and easy, perfect when you have an 8 month old, and a good way to get lots of vitamins in one meal and we have teamed up with Wayfair to bring you one of our favourite smoothies. You don’t just have to serve drinks in these. We have used them for overnight oats too and the handle comes in really handy (see what I did there) to eat them on the go. Speaking of which, we will be posting more on-the-go breakfast recipes that will be perfect for the commute. I mean, breakfast burritos are great and all, but they are not very commuter friendly. You don’t want to be throwing guac and chipotle salsa all over the person in the train seat next to you!

- 1 Banana
- 250 ml Light coconut milk
- 250 ml Nut milk (we used cashew to make it really creamy)
- 2 tbsp Honey
- 300 g Fresh pineapple
- 1 tsp Vanilla extract
Put all of the ingredients in to a blender and blend until smooth.
