Porridge

As it is worldwide oatmeal/porridge month, I thought I would post some of the ways that I love to eat porridge. It is such a versatile and healthy breakfast; I tend to eat it most mornings. On the weekend, we normally treat ourselves to some pancakes. Porridge is great because it is slow releasing, will not spike your sugar levels and will keep you full until lunch. It is also full of fiber, which reduces LDL cholesterol and has cancer fighting properties. They are a good source of vitamin E, iron, protein and magnesium too. I make mine with skimmed or almond milk.

Here are some of my favourite toppings to keep it interesting:

Sweet

- Honey

- Agave

Fruit

-  Dates

- Berries

- Apricots

- Banana

- Apple

- Raisins

- Figs

Fats

- Almonds

- Walnuts

- Almond butter

- Toasted coconut

- Seeds

Spices and flavour

- Cinnamon

- Ginger

- Vanilla

- Greek yogurt

I also like to mix some quinoa into the oats as well.
