When it comes to BBQ’s, the main dishes are normally sorted – burgers, sausages, skewers etc in different varieties, but side dishes are usually the same potato salad and coleslaw. This summer, my mission is to create lots of delicious, healthy and versatile side dishes and to share them all with you. As well as being super healthy, this dish is nice to look at as well with all the bright colours. This dish would be a hit at your next BBQ.
Serves 4
Ingredients:
- 300g/1oz brown rice
- 8 cherry tomatoes, halved
- 1 red onion, diced
- 1 red pepper, chopped
- 10 radishes, chopped
- 1 jalapeño, chopped
- Juice of 1 lemon
- Handful of fresh dill, chopped
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
1) Add the rice to a pan of boiling water and cook for 40 minutes, until soft. Drain and rinse under cold water.
2) Put the rice in a bowl and stir in all of the other ingredients. Leave in the fridge for 30 minutes and serve.
