With summer just around the corner (we hope), we can officially start thinking about getting the picnic basket out of hibernation and thinking of all the delicious things that we are going to fill it with. Summery drinks, crunchy snacks, cakes and fruit and of course sandwiches and wraps.

It can be easy to let picnic food get a bit out of hand and for it to all be unhealthy, but it’s also really easy to make a healthy picnic that is delicious too. Before summer arrives we will be sharing our favourite picnic friendly recipes, starting with these Smashed Lemon Chickpea Wraps, using Gluten Free Protein Wraps from Newburn Bakehouse by Warburtons.
You know that we are huge fans of chickpeas here at HHH. Well, Dave isn’t as he is massively allergic to them, but I love them and eat them at least twice a week. Not only are they packed full of protein, but they are great if you are trying to be healthier on a budget too.
They are a fantastic source of protein if you are a vegetarian and smashed chickpeas are well known in the vegetarian community for being a delicious alternative to tuna in wraps and sandwiches. Now, I can see your confused look from all the way over here. Yes, even through the computer/phone screen! Of course chickpeas don’t taste like fish, but when they are mashed up they have the same texture as tuna, making them a good veggie alternative.
Not only do the chickpeas provide a great source of protein in this recipe, but the wraps themselves have 11g of protein per wrap as we used the Newburn Bakehouse Protein Wraps.
Newburn Bakehouse, the “Free From” brand from Warburtons have developed these wraps that are not only high in protein, but also gluten free too. They are baked with a blend of seeds; Chia, Quinoa, Millet and Linseed and they are an easy way to increase your protein intake.
I can really struggle to get enough protein sometimes, especially with a plant based diet. It’s so important for me to make sure I am getting enough protein. Protein contributes to the growth of muscle mass and maintenance of normal bones. These wraps have been so helpful as they boost my protein intake and they are quick and easy too – perfect as a new mum who doesn’t have much time in the kitchen.
These wraps are high in fibre and low in saturated fats too, but most importantly they are delicious. They have an almost nutty taste to them, due to the seeds, and they hold together really well when wrapping, which you can’t say about too many gluten free brands.

I hope I haven’t tempted fate by mentioning picnics and subjected us to months of grey clouds and rain. Food is something that should be enjoyed and that can be done in a healthy way too, even at a summer picnic. These Smashed Lemon Chickpea Wraps are something that the whole family can enjoy, even those with dietary requirements.
Smashed Lemon Chickpea Wrap
- 1 400g can of chickpeas, drained
- Juice of 1 lemon
- 4 tbsp fat free fromage frais
- A pinch of sea salt and black pepper
- 2 garlic cloves, crushed
- 4 handfuls of rocket lettuce
- 4 Newburn Bakehouse by Warburtons Gluten Free Protein Wraps
- Pomegranate to decorate (optional)
Put the chickpeas in a large bowl and mash, leaving some lumps. Add the lemon juice, fromage frais, salt and pepper and garlic and mix well.
Add the rocket lettuce to the wraps and top with the Chickpea mixture and top with pomegranate.
