The smoked salmon and eggs in this breakfast provide a double boost of protein to help support muscle development, so this is the ideal post workout meal. This Smoked Salmon, Asparagus and Herb Omelette is equally good for a quick and easy dinner with some sweet potato fries and a salad.
There is just something about having smoked salmon for breakfast that makes the day feel that little bit more special. I must admit, this isn’t an every day breakfast ingredient for us, but usually on a Sunday we will have some kind of smoked salmon and egg dish, and this omelette is a favourite when we want something quick and easy.

We have had it on every day and we are cheering team GB on, but also have huge respect for all the other athletes around the world – especially all the gymnasts…they are insane. But team GB is doing great so far, and we even smashed a swimming world record and got gold! Watching the Olympics is really inspiring me in terms of fitness and I hope it is inspiring you to get more active too.
Getting active is great, but you need to make sure you are fuelling your body correctly. The National Lottery, who are supporting team GB, have set up the Food Champions website to share with you some delicious recipes that Team GB athletes eat to make sure that they perform at their best. I decided to try this Smoked Salmon, Asparagus and Herb Omelette that is a favourite of Non Stanford.
Non Stanford is a Welsh triathlete and the 2013 World Champion. Non first showed her potential on the cross country scene, becoming the Welsh Schools 1,500 champion for three years in a row from 2002. In 2014 she was invited to South Africa to take part in the first ever Dame Kelly Holmes ‘On The Camp With Kelly’ mentoring programme for promising young runners.
Non took up triathlon at university in Birmingham after a series of injuries kept her off the track. 2012 was a breaktrough year with senior gold in the ITU Triathlon Mixed Relay and U23 gold at the ITU World Championships. 2013 started with real impact with a win on the ITU World Triathlon Series in Madrid and she went on to win the ITU World Triathlon Series, becoming World Champion. The omegas 3 oils in the salmon support the immune system and provide a range of health benefits, which is why we try to eat salmon about twice a week. We don’t eat a whole lot of meat any more, with around 90% of our diet being vegetarian, but we haven’t cut it out totally because we enjoy it. Make breakfast a bit more special this week and give this omelette a try.
The Stanford Smoked Salmon, Asparagus and Herb Omelette
Ingredients – Serves 2:
– 4 eggs
– Pinch of salt and pepper
– 150g smoked salmon finely chopped
– 6 asparagus spears cooked and sliced
– 2 tbsp fresh chives finely chopped
– 1 tbsp. olive oil
1) Crack the eggs into a bowl and add a pinch of salt and pepper and whisk the eggs well. Heat a medium sized frying pan with the olive oil over a medium-high heat. Now add half the eggs to the pan and allow cooking for 30-45 seconds when the egg starts to set with a fork pull the egg into the centre of the pan and repeat this until the egg is almost cooked.
2) Remove the pan from the heat and sprinkle half of the salmon, asparagus and half of the parsley and place under a hot grill for 15 seconds. Now fold the omelette over and turn out onto a serving plate. Repeat this process again and serve the omelettes.
