Burger and fries is one of the foods I crave a lot. I used to eat so much of this (although veggie burgers) when I was overweight and it is what contributed to where I was. I don’t crave McDonald’s or quick and easy processed burgers now, I crave home-made, full of flavour burgers and home-made fries. Luckily for me and my cravings, these are so easy to make yourself and the burgers can be made quicker than it would take you to get through the drive-thru at McDonald’s.
Serves 2
Ingredients
- 2 rolls
- 2 small chicken breasts
- 3 garlic cloves
- 1 inch piece of ginger, chopped
- 2 tbsp fresh coriander
- 2 tsp chopped red chili
- 2 tbsp lemon grass
- 2 tbsp reduced fat cheese
1) Put the chicken, garlic, ginger, coriander, chili and lemon grass into a blender.
2) Blend for 2 minutes.
3) Form into burgers.
4) Cook on a George Foreman/Griddle for 10 minutes and serve in a roll with a little cheese and lettuce.

The lemon grass, is that fresh or is it a dried one? That’s an ingredient I’ve not tried yet.

It is fresh lemongrass. You can normally find it near the garlic/ginger/onions in the supermarket. It sometimes comes in a thai selection pack with chillies, shallots and ginger. I love it, it is one of my favourite flavours.
