What I Ate Wednesday

I haven’t updated here in ages. I wish I could say it is because I have been super busy and productive, but it is not really. I have been getting a lot done, but at the same time not much at all. Do you ever have one of those weeks where you have SO much to do, that you just can’t seem to get started with it? Well I am having one of those weeks.

The online music magazine that I work on went live with the new layout at the end of last week, so I have been working a lot on that and getting new content ready. It means that HHH has taken a bit of a back seat. But I am back and will be posting more often again. I am sure you all didn’t know what to do with yourselves whilst I was gone ;)

Hmmmm – what is new with me? Well, I am still going *strong* with the couch to 5k training. I am in week 3 at the moment, which means that I am running for 3 minutes straight. 3 minutes!!! That might not seem like a lot to those of you that run 5ks daily – but that is huge for me! The first 3 minute run was horrible, but the second day I did it (which was today) was much easier. It is amazing what a good song on your iPod can do. Having a song that I love and can sing along to makes those 3 minutes so a lot quicker. I am noticing my recovery time getting shorter as well – which means my cardiovascular health is improving, which is the reason why I am aiming for the 5k.

I am aiming to be able to do an unassisted pull up by the time I go away in 7 weeks time – but the equipment in my gym isn’t really helping. Those seat things that you kneel on to “assist you”, well the pully thing (see – I know all the technical terms) is really stiff, so the seat doesn’t assist me at all. Not too sure I am doing to be able to work up to an unassisted one if I can’t even do an assisted one. Something to work on I guess.

I am still in the process of changing over this website too. I am looking for a new WordPress theme – but none of the ones I find do what I want/need them to do. So, I am still saving so I can get a customised one built. It will be worth it.

Sorry that you guys still can’t comment on most of my posts (just the recipes). That is one of the major reasons why I am changing over the website – and so it looks a bit better and can cope with the sponsors ads that I have been getting requests for. There are lots of you who just send me messages through the contact page as a comment instead – and I really appreciate it. But, stick with me – the website will be changed soon and you will be able to comment. How novel!

I also really need a new laptop. It would take too long to list all the things wrong with this one (well, it is 5 years old). But the worst thing, is that you can’t use it on a surface of any kind whilst it is plugged in charging. I know -such a random fault. At least the B button is fixed (every time I typed B, it would put around 10 of them, instead of just one. I mean – I’m dyslexic – but that just made me look stupid).

 

 

So – onto What I Ate Wednesday!

Today we have had nice weather! Did you see?! That bright that that was in the sky for a few hours today – that was the SUN! Wow – that was a surprise. Anyone not from the UK is probably so over summer by now, when ours still haven’t fully arrived. I have been sitting out in the garden a little and enjoying our garden, seeing as it was the reason we chose this house.

 

Was getting a bit bored with plain water again – so I put some lemon slices and mint leaves in it today – changes it up so much.

 

 

I had the usual porridge with peanut butter for breakfast today – it didn’t warrant a photo. I am so bored of porridge and I am in a bit of a breakfast rut. I shall be moving out of that rut next week but creating some new and interesting breakfast items – so stay tuned for those!

Lunch was this kale salad that was made with kale, red cabbage, red onion, carrot, olives, cucumber, jalapeño, sun-dried tomatoes, red pepper, coriander/cilantro, pumpkin seeds, pinto beans, chicken breast and avocado. The dressing was the zest and juice of half an orange, red wine vinegar, olive oil, a little soy sauce, cumin seeds and a pinch of cinnamon and a little sea salt and black pepper. It was amazing and very colourful too! I had a post workout snack of hard boiled eggs, a plum and some almonds.

Dinner was burgers. But not just any burgers – Fajita burgers! You may have guessed by now – I really like burgers. You can make them SO much healthier if you make them at home – which means they are the perfect summer food. I don’t eat them every day or anything, but in the summer we probably have them once a week. Definitely a summer staple.

I will be posting the recipe for the Fajita burgers soon – but they are really simple. We had it with butternut squash fried and salad.

 

 

Another summer staple is ice cream. But, if you are watching your weight, it is not a good summer staple to have. So, what do you do? Eat an alternative. This banana soft serve is the BEST alternative that I have made. I will be posting the recipe for this either later tonight or tomorrow. You don’t want to miss it. Tastes like ice cream, but no cream and no sugar. Yum!
