What I Ate Wednesday

It is Wednesday, and that means that it is time to post about what I ate yesterday. If you follow me on Twitter, then you see what I eat all day every day anyway, but I have just started getting involved with the What I Ate Wednesday posts.

I always forget to take pictures of my snacks, as they are normally just grabbed as and when I am feeling hungry and on the go. Not enough time to figure out the light in my kitchen and take a decent photo of them.

Breakfast yesterday was home made muesli with some goji berries added to it. I’m still not convinced about goji berries, but I have a huge bag of them left, so I will give them a go until they run out and then make my mind up.

 

Around mid-morning I had a handful of nuts, a banana and some berries.

For lunch, I had a HUGE chicken, avocado and bean salad. I have been eating my salads from a big serving bowl, rather than a salad bowl, as there is no such thing as too much lettuce.

Before I headed to the gym, I had some toast with peanut butter – my favourite pre-workout snack. Then, as soon as I got back from the gym I had 2 boiled eggs.

Dinner was a creamy Korma, cooked with Greek yoghurt instead of cream. You wouldn’t know it wasn’t cream and it was so fragrant too. We also added prawns too it, instead of the usual chicken and had it with brown rice.

After dinner we had some Greek yoghurt with strawberries and blackberries.

I also had about 5 cups of green tea throughout the day as well.

The theme for this months What I Ate Wednesday posts is summer staples, and salads are definitely my summer staples. They are so versatile and quick to prepare, as well as being super healthy. Another summer staple of mine is this frozen berry dessert. You can still have dessert in the summer and stay healthy.
