This is definitely one for the garlic lovers, as this has 2 garlic cloves per person. But at least you and the person having the second portion can be garlicky together! When something has garlic in the title, I expect to be able to taste the garlic and there is no doubt about it with this dish.
You know those days when you have have virtually nothing in the cupboards? Not those times when you say you have nothing, but really the cupboards are bursting, you just don’t want to eat any of it. No, not those days. I am talking about the day before payday when all you have is some spaghetti, condiments and a few sad looking herbs at the back of the fridge. You know pay day is just around the corner, and you just have to hang in there a few more hours before you spend your month’s wage on delicious food. Well, you might be surprised on what you can make on that last day of the month.
We call this our day before pay-day dinner, as it is seriously budget busting, but it certainly doesn’t lack in flavour. If you use all the leftover fresh herbs that you have in your fridge, then this costs just pennies to make. When I was a student, I practically lived on this (and baked beans of course – I am such a cliche).
There isn’t really a sauce to speak of with this spaghetti dish, but it’s the olive oil that make a sort of dressing, so try and use a really good quality one as you can taste the difference.
We are in the process of creating lots of go-to meals that are ready in under 15 minutes and we will be creating a new category in the recipe section for that. Of course we will be trying to keep them as healthy as possible, because fast food can be healthy too.
I think that people think that just because we are food bloggers, all our meals are super complicated and creative. However, it’s quite the opposite. We can be just as lazy as the next person and want something quick and simple, so we don’t reach for the pizza menu. So, expect lots more recipes like this coming up on the blog, because who wants to spend more time in the kitchen than they have to?!

- 140 g wholewheat spaghetti
- 2 tbsp olive oil
- Juice and zest of 1 lemon
- A pinch of sea salt and black pepper
- 4 garlic cloves, crushed
- 2 handfuls of mixed fresh basil, parsley, mint and coriander (cilantro)
Add the spaghetti to a pan of boiling water and simmer for 12 minutes.
Drain the spaghetti (reserving a little of the water) and then put it back in the pan and add the rest of the ingredients and mix well and serve.
