I am not going to bang on about how Breakfast is the most important meal or the day, but I think it is a contender for being the most delicious meal of the day. Why do you think that ‘brinner’ (Breakfast for dinner) is a thing? You don’t hear people making up a word for dinner for breakfast. Or do you (Dinkfast??). Anyway, breakfast is where it’s at and these pancakes are good at any time of the day, but they certainly make getting out of bed in the morning that little bit easier.
We have teamed up with Nutri-Brex to show you that there is so much more that you can do with granola then just throwing it in a bowl with some milk. Not heard of Nutri-Brex before? Well, they are bringing you some delicious gluten free granola that you are going to want to try!
How did it all begin? Fed up with the lack of truly gluten free cereals that could keep tummies happy and bodies healthy, they just went and made one themselves – Nutri-Brex; the UK’s very first gluten free alternative to wheat-based breakfast cereal. Yay!

Nutri-Brex challenged us to come up with a recipe that used their 5 Ways Granola and we just love the Honey, Almonds and Seeds flavour. It’s called 5 ways because you can use it as granola, porridge, topper, bircher and smoothie – but this recipe is a bonus 6th way! You can pick some up in Waitrose, Asda, Booths, Tesco, Sainsbury’s, Morrisons, Holland & Barrett, Ocado, Whole Foods and WH Smiths.
We came up with this recipe just before the house move. We were packing things up in the kitchen and realised we had a couple of open bags of granola with just a little bit left in them. Rather than packing up such a small amount, we thought of new ways to use them and after seeing a few recipes for granola pancakes on Pinterest, we thought we would put our own spin on them and add in some apple and spices too – it is autumn after all.
If you have been following my Instagram Stories, you will have seen then we have just moved house. We left Manchester at the weekend and headed further north into Lancashire to be closer to the countryside. I think we are going to be really happy here, but there are currently still boxes everywhere, so this is where we are currently shooting our recipes. A tad cluttered.
This wouldn’t be an every day breakfast for us, as it’s really hearty. But with all the unpack we have to do, we need something that is going to keep us full and slow releasing energy. These pancakes totally fit the bill. So, if you have a busy day ahead, or want something to feed a crowd, give these Apple and Granola Oat Pancakes a try.
Apple and Granola Oat Pancakes
- 90 g rolled oats, blended in to flour
- 125 ml plain yoghurt
- 125 ml apple sauce
- 2 tbsp coconut oil, melted
- 1 egg
- 2 tbsp maple syrup
- 1 tbsp baking powder
- 1 tsp vanilla extract
- 0.5 tsp cinnamon
- 0.5 tsp ground ginger
- 40 g Nutri-Brex Granola (plus extra for serving)
- 2 small apples (plus extra for serving)
- Greek yoghurt and maple syrup (for serving)
- Place all of the ingredients in to a bowl and mix well to form a batter. If it is a little dry still, then add a little milk to thin it out.
- Add a little coconut oil or butter in to a pan and then adding a ladle of batter at a time, cook for 1-2 minutes each side and flip. Keep each pancake warm under foil until they are all cooked.
- Serve with Greek yoghurt, extra Apple, Granola and maple syrup.
