When I told Dave we were having pizza for breakfast his eyes lit up as he thought I had a Domino's stash somewhere. Then when I told him that it was a healthy breakfast pizza with spinach on it, he initially looked disappointed. Until I brought out these bad boys and cut in to a perfect runny yolk. Egg on a pizza? Who knew!
Well, my friend Claire is an expert when it comes to egg on a pizza. Claire and I met 15 years ago on our first day of university and 15 years later I am going to be bridesmaid at her wedding ❤. Never did I imagine that, 15 years ago when I was looking at her in disbelief as she cracked a couple of eggs on to a pizza and put it in the oven. We were drunk students, but even drunk students don’t do crazy things like put eggs on their pizzas. She told me to trust her, and in my post cheap wine, shots and everything else haze, I did. She was right - it’s genius.
The runny yolk adds a sauce to the pizza and with the added protein it practically makes the pizza healthy, right?! I have never looked back and thanks to Claire, egg on a pizza is a firm favourite in our house and that’s where the inspiration for this breakfast pizza came from.
Although the egg is the star of the show, with it being a breakfast pizza, it’s really all about the spinach. It forms a nice base layer for the egg to sit on and how great is it to be able to start your day with pizza, and a big boost of iron. Seriously, eat this and you will feel pretty smug the rest of the day that you had pizza for breakfast, and it didn’t come out of a cardboard box. But feel free to put it in a pizza box if that makes you feel better.
As with most of our recipes, these Breakfast Pita Pizzas are so easy to adapt. Are you having friends stay over and cooking everyone breakfast the following morning? Set up a little breakfast pita pizza bar and let everyone make their own from a selection of toppings. Chopped up bacon is always a winning choice, as is some chunks of avocado after it’s cooked. The possibilities are endless.
How to make Breakfast Pita Pizza
Breakfast Pita Pizza
Ingredients
- 2 Wholemeal pita breads
- 2 Eggs
- 60 g Mature cheddar cheese, grated
- 2 cup Spinach, chopped
Instructions
- Divide the cheese and spinach between the two pitta breads leaving a circle in the middle.
- Crack the egg into the middle of the spinach.
- Place in a pre-heated oven at 200°C for around 10 minutes, or until the egg white has cooked.
