These grown up toasties (which kids would love too), are a great way to sneak in some extra vegetables and the perfect recipe to greet autumn with open arms. Creamy butternut squash and leafy spinach make this a veggie packed comfort food made with some delicious Chilli and Cheese bread from the Asda Speciality Artisan range.

Nothing says autumn more than comfort food and also butternut squash. An essential ingredient in any kind of autumn cooking, we had never put it in a cheese toastie before. We have been seriously missing out! This was one of those recipes that came from ‘what do we have that needs using?’ We are really trying to focus on bulking out our meals with vegetables at the moment. Even if the dish isn’t something traditionally healthy, the extra veggies give it a bit of a health boost.
We went ‘wild glamping’ last week, which meant whilst we were staying in a comfy bell tent, there was no electricity, the shower was a bucket, we were in the middle of a isolated forest and all cooking had to be done on the fire. It was bliss!
But there was not a Pot Noodle in sight for us, as we are still foodies, even with limited resources in a forest. We took as much as we could that didn’t need to be kept cold, was filling, healthy and easy to cook – which is why we had a butternut squash and some spinach with us. They can be added to so many things too.
Something we always take camping with us is a couple of loafs of really good quality bread, which is why we were happy that a delivery of some of the Asda Speciality Artisan range arrived as we were packing up the car. Some good quality bread can really transform a simple dish and make your camping meals a little bit more special. We used the Chilli and Cheese loaf for these toasties and the chilli complemented the flavours really well.
The Asda Speciality Artisan Bread range is inspired by different breads from around the world and allows you to enjoy something beyond the normal loaf of bread. Why go for a plain loaf when you can have a Carrot and Pumpkin Boule, Jalapeno Cheese or a Sourdough Batard? These are just 3 of the breads in the range of 13 delicious products. The range was developed by Asda’s Master Baker, Maddie Munden. She travelled all around Europe visiting local bakeries to get inspiration for these loaves. Our recipes come from inspiration from our travels, so we love that it is the exact same with these loafs.
The whole range is lovingly hand crafted using traditional artisan techniques and each loaf is packed full of flavour and quality ingredients and baked in store daily for a fresh golden finish. So, next time you are in Asda, head straight to the bakery and pick up a fresh loaf to be used for any occasion.
There is just something so special about getting back to basics and cooking over a fire. These toasties kept us warm on one of the colder nights of our trip and were washed down very nicely with a glass of red wine. We enjoyed these sandwiches as we sat and listened to owls waking up ready for the evening ahead.
I have to admit, I did feel a little smug sitting there whipping this up whilst other people in camp (there were only 4 others here) were making instant noodles or opening a can of something. No judgement – I love me some instant noodles and a can of beans, but it’s amazing what you can make over the camp fire with a little effort.
We are going to be sharing lots more camping recipes with you. But you don’t have to go camping to enjoy them. The great thing about camping recipes is the simplicity of them, the small number of ingredients and the focus on great flavours. If you want to make this at home, rather than on a campfire, then just put the pan on your hob instead.
Campfire Spinach and Butternut Squash Cheese Toasties
- 0.5 Loaf of Asda's Speciality Artisan Chilli and Cheese Bread sliced in to 4 slices
- 2 tbsp butter
- 1 tbsp olive oil
- 0.5 Small butternut squash, peeled and cut in to very small cubes
- 1 small onion thinly sliced
- 1 pinch Sea salt and black pepper
- 60 g Spinach
- 40 g Asda extra mature cheddar, grated
- Add the oil to a large pan and put over the campfire/on the hob.
- Add the butternut squash and onion along with the salt and pepper and mix well and cook for around 4-5 minutes, stirring often to avoid burning. Remove from pan and set aside.
- Spread the butter on 4 slices of bread and then begin to build your sandwich.
- On the non buttered side of 2 slices of bread (the buttered side will go in the pan to give it that golden look). Add the butternut squash and onion mix and then add the spinach and top with the cheese. Add the other slice of bread on top.
- Heat a dry pan and then add the sandwiches, butter side down, and cook for around 5 minutes, turning halfway through. Be careful when turning, so the filling doesn't fall out.
- Cut and serve.
