Everyone’s favourite meal as a kid, and even as an adult, has had a makeover with these oven baked Crispy Cajun Chicken nuggets. Ditch the frozen version and try making them yourself with this really simple recipe.
I think if you asked most kids what they wanted to eat, they would say chicken nuggets. Whether you have McDonald’s to thank for that or not, they are a favourite with a lot of people, but are usually filled with junk. I loved chicken nuggets, chips and baked beans when I was little and it’s nice to know how easy it is to make a healthier homemade version now, for if and when my own little one has a nugget craving.

Whilst most people would make homemade chicken nuggets with breadcrumbs and then deep fry them, I have given these a double healthy twist by coating them in Weetabix Protein Biscuits and oven baking them. When these biscuits are crushed up, they make an amazing coating for chicken and could even be used on cod too, to make a healthier fish finger. And you thought Weetabix was just for breakfast!
Another added bonus is that this meal has a triple dose of protein with the chicken, egg and the Weetabix protein, so I think they would make a great post workout meal. What is chicken nuggets if you don’t have anything to dip them in? Try making these to eat alongside my homemade healthy Tomato Ketchup or BBQ sauce. I would suggest serving these with some Baked Garlic Polenta Fries too. If you haven’t tried these, put it on your list for the weekend!
You can add all kinds of different seasonings to these chicken nuggets too. I went with Cajun, because we are on a Cajun kick at the moment, but you could use Mexican spices, or Italian. The beauty of these is that you can make them differently every time, but stick with using Weetabix Protein Biscuits as the coating, as it gets them really nice and crispy without having to deep fry them and you get the extra protein too.
Crispy Cajun Chicken Nuggets recipe:
Crispy Cajun Chicken Nuggets
- 250 g Chicken breasts, cut in to chunks
- 1 Egg, beaten
- 2 Weetabix Protein Biscuits, crushed
- 1 tbsp Cajun seasoning
- Mix the Cajun seasoning in to the crushed Weetabix Protein Biscuits and set aside.
- Dip the chunks of chicken in to the beaten egg and then dip in to the crushed Weetabix.
- Put on a lined baking tray and put in the oven at 200°C for 20-25 minutes until the chicken is cooked through.
