Hands up who is feeling stressed at the moment *raises hand*. I know it is meant to be the happiest time of the year, but it is also the busiest and with all the christmas shopping, family visits and pressure at this time of year, it can be easy to let everything get on top of you and feel overwhelmed. Looking after your mental health is just as important as looking after your physical health, because it can control your day to day life.
Exercise and meditation are great for stress, but did you know that you can also deal with stress via your diet as well? This festive chopped salad is a stress busting side dish, because it is packed full of ingredients that are well known for helping with stress. Did you know that pomegranates and pecans can reduce cortisol, which is the stress hormone? Consequently, these foods will help you to have healthier stress levels. Leafy greens like kale contain magnesium, which helps to relax muscles, and calcium which is calming. This festive chopped salad is packed full of pomegranate seeds, kale and pecans, so it the perfect stress busting salad.
If you thought salads were boring, then hopefully this is going to change your mind. Bland lettuce is replaced with crunchy kale and it has so much texture going on with the apple and pecan and it’s bursting with colour and flavour from the pomegranate. Put this on your Christmas dinner table and you will be convincing all your party guests that salads are far from boring too.
You could keep this salad vegan, but a little bit of feta goes a long way in this dish. A few little creamy feta crumbles on this really brings the whole salad together. If you haven’t tried feta and pomegranate together, then you have to! It also works well with goats cheese or stilton too. Really, any cheese you have leftover on the cheese board works well!
Whilst your brain might be filled with Christmas food ideas, don’t forget the table setting and all the plates and bowls that the food is going to be served in. Festive Chopped Salad recipe:
Festive Chopped Salad
- 100 g Kale, chopped
- 1 Medium apple, diced
- 16 Pecans, roughly chopped
- 1 Pomegranate (seeds only)
- 45 g Light feta, crumbled
- 1 tbsp Olive oil
- 2 tbsp Red wine vinegar
- 1 Orange (juice and zest only)
- 1 pinch Sea salt and black pepper
- Put all of the ingredients in to a large bowl and mix well.
