Picnic season is here and I am going to be sharing lots more picnic friendly recipes that will keep everyone healthy and happy. I will try to make sure they will travel well too, as no-one wants to get to their picnic destination to see a food explosion in their picnic basket.

Let’s be so very typically British and talk about the weather. I think summer is FINALLY here. Well, it is in my garden anyway, and unless my house has its own weather system over it, I think we can finally call it summer. Let’s just ignore the epic thunder storms we are meant to be getting in about 5 hours, because who doesn’t love a good summer storm?
When it is as hot as it has been the last couple of days, I really don’t feel like cooking, unless it is on the BBQ outside of course. I want to spend the least time possible in the hot kitchen and the less I have to have my oven on, the better. So, I have been throwing together a lot of epic sandwiches, like this one.
When I make a sandwich, I rarely think it through. I mean, there is not much to think about and I think the best sandwiches come from getting creative and following your taste buds. Don’t just eat the same boring sandwich every day, do something different and “Go Freestyle”.
For the month of June, Lurpak challenged me to “Go Freestyle” with my sandwiches and see what I could come up with. I created a lot of random combinations over the month, the frittata and spinach sandwich might have been the most random, a great way to use up leftovers though, but this feta, avocado and roasted red pepper sandwich was by far my favourite. It’s bright and colourful, full of healthy fats and greens and of course a little hint of feta.
I just have to say, I honestly love Lurpak spreadable. I get so frustrated trying to spread regular butter on bread and just end up making a right mess of the slice of bread from the hard butter. Plus, it’s real butter.
Ingredients – Serves 1
2 slices wholegrain bread
1 tbsp Lurpak spreadable
1 handful of watercress
Half an avocado, sliced
1 roasted red pepper, halved
30g light feta, crumbled
A pinch of black pepper
Quarter of a lime
1) Spread the butter on both slices of bread and top with the watercress.
2) Add the roasted red pepper and the avocado and squeeze the lime on top.
3) Crumble the feta on top and add the black pepper and top with the other slice of bread to serve.
