Well, well, well. It looks like it is still summer here in the UK. It’s the hottest September since many years ago and despite the epic storms and flooding we had on Tuesday night, the weather has been glorious. That means that comfort food has totally gone out the window and we have been eating fresh and light meals, like this.
This light meal was very much needed after the epic cake that we had yesterday. But, look at it! It was caramel, cinnamon and pecan cake and it might just be the best cake I have ever eaten. But, there was no guilt involved after eating this cake, as it was very much deserved after a 15km walk around Dovestone National Park in the Peak District. Just look at the stunning views.
This is probably the last long walk we are going to be doing for a while now, as baby is due in just 50 days. I am all for staying active during pregnancy, and going for a few small hikes is not an issue, but I also think it’s important to listen to your body and my body is now telling me it’s time to slow down and take it easy, so that’s what I shall be doing. I can’t wait to come back here with baby though.
But, despite all the calories burnt with the epic walk, the cake was still filling a huge space in our stomachs, so dinner needed to be on the light side. We also didn’t feel like going back out again, so dinner needed to be something that we already had and luckily we had recently been to Iceland and stocked up our freezer with their frozen fish range. You might have been my tweet about it, but I am seriously impressed with the selection of fish they have, and now I have tasted it I am really impressed with the quality too.
I am all about promoting eating fresh food, but fresh doesn’t always mean better. Iceland’s frozen fish is actually fresher than fresh and that is the #PowerofFrozen. Research has shown that Iceland’s Freshly Frozen Sea Bass Fillets are as fresh as those from the Waitrose fresh fish counter, but they are half the price! What’s not to love about that?
It’s not just their sea bass that is fresher than fresh though! Many professional chefs insist that frozen octopus is far more tender than fresh. Because a lot of fish that we eat is imported, freezing it keeps it so much fresher. When the fish is caught, handled and frozen immediately, you are practically stopping the clock and keeping is fresh. Not only is it fresher when it is frozen, but it is much better value too. The best thing is, freezing it doesn’t lose any quality, and the texture is just as good as fresh.
Head over to your nearest Iceland store and stock your freezer up on their frozen fish. Whilst you are there, take a look at their new seafood dishes too. We tried the Frutti Di Mare, which is mussels, squid, clams and shrimp in a tomato sauce and it went really well with some pasta for a quick meal.
They also do a Sugo Alle Vongoie, Guazzetto Di Mare and Zuppa Di Pesce and all of these dishes are created according to traditional Italian recipes with natural ingredients. They are quick and easy to prepare and have no artificial flavours or enhancers.
How to make this Baked Sea Bass – Serves 2:
Baked Sea Bass
Ingredients
- 2 Frozen Sea Bass Fillets
- 1 lime (juice and zest only)
- 1 tbsp olive oil
- 0.5 red chilli finely diced
- 2 garlic cloves crushed
- 1 tbsp ginger grated
- 2 tbsp fresh coriander (cilantro) finely chopped
- 2 spring onions (scallions)
Instructions
- Put the lime juice and zest, olive oil, chilli, garlic, ginger, coriander and spring onions in to a bowl and mix well.
- Put the sea bass on to a lined baking sheet and top with the mixture.
- Put in the oven at 190C for 25 minutes.

Other than octopus we don’t eat frozen fish. Great recipe and good that you are listening to your body. Seems Europe had a heat wave in September of note.
