This comforting and veggie packed Garlic Kale, Tomato and Feta Spaghetti dish is ready in under 10 minutes and it is packed with protein, making it the perfect post workout meal.
If you are not a fan of kale, then you could use spinach or cabbage, but I always think that kale and garlic go really well together. A simple dressing of lemon juice and olive oil make this a light and fresh dish that can be eaten in summer, but comforting enough for colder months too.

We tried growing kale in our garden this year, but sadly it all died. Well, sadly for us, but not sadly for the snails that must have had a right feast one night. We went to bed one night and there was kale in the garden and we came down the next morning to no kale at all. All gone! I can’t blame them though, as kale is delicious and I am sure they were just picking it to go in their morning green juice or something.
Kale isn’t just delicious in green smoothies and juices (although I am a new kale packed green smoothie recipe for you on Monday), but it goes really well in pasta. Especially when you cook it in some garlic (everything is better with garlic, right?!) and some lemon and of course throw some feta on there too. You could always leave out the feta and make it totally vegan.
Let’s talk spaghetti shall we? I am never one to turn away from a carb loaded spaghetti dish, however if I ate that every time I had a pasta craving then the results wouldn’t be good, so I am always looking for a lighter alternative. Recently I have found this in the Explore Pasta range and we are currently loving this Soybean Spaghetti.

Garlic Kale, Tomato and Feta Spaghetti recipe:
Garlic Kale, Tomato and Feta Spaghetti
- 100 g Explore Asian Soybean Pasta
- 3 handful Chopped kale
- 3 Garlic cloves, crushed
- 2 Tomatoes diced
- 1 Lemon (juice only)
- 1 tbsp Olive oil
- 30 g Light feta
- Add the pasta to a pan of boiling water and simmer for 5 minutes.
- Heat a little spray oil in a pan and add the garlic and kale and gently cook for 2 minutes.
- Drain the pasta and put back in the pan and add the cooked kale along with the rest of the ingredients and mix well.
- Serve on plates and crumble feta on top.
