Didn’t think avocados could get any better? They just did! Not only is Guac-Kale-Mole a feast for the eyes and ears, let’s face it, it’s fun to say as well. It’s fairly obvious from the title, but this is avocado and kale blended together to make an epic veggie packed guacamole.

It’s Taco Tuesday (are you all enjoying my Mexican themed posts every Tuesday?) and your Mexican dishes would love to be topped with this delicious guacamole. How do I know that? They told me! I talk to Mexican food! I joke. Honestly.
Someone asked me the other day if I will run out of Mexican recipes to share on Taco Tuesday and I had a little giggle. Even if this blog is running until I am on my death bed, which I think it will be, I will still have enough Mexican posts to share every Tuesday. They might start getting a little tenuous though. Towards the end it might be something like Mexican Tea. Hey! Is that a thing?
If you live with someone that you feel like you have to trick in to eating vegetables, then this is something you can to try on them. Dave is a bit of an avocado-fiend (would I have married someone that wasn’t?), but he is not a fan of vegetables (I know, it was almost a deal breaker), but even he will eat this. I am a firm believer that you can mix avocado with almost anything and it will taste good, but don’t put me to the test on that one.
I first discovered kale guacamole in Whole Foods and I haven’t been able to stop thinking about it ever since and seeing as there is no Whole Foods anywhere near me, I decided to make some myself and let’s face it, it was much cheaper too. I love Whole Foods so much and sometimes I really wish there was one in Manchester, but I would spend so much money in there. I am sure it won’t be long before they do head up north and then I will be broke. But my belly will be happy.
Ingredients – Serves 2:
– 1 avocado
– 2 giant kale leaves, de-stemed and chopped up
– Half a small red onion, diced
– 1 jalapeno, diced
– 1 small tomato, diced
– 1 garlic clove, crushed
– 4 tbsp coriander (cilantro)
– Juice of 1 lime
– A pinch of sea salt and black pepper
1) Put everything in to a food processor and blend until smooth. If you don’t have a food processor, you can just mash it together.
