Tuck in to this hearty and healthy fish pie. Simple to make, totally comforting and a meal that the whole family will love.
When I was a lazy and unhealthy student, ready-made fish pie was my go-to meal. You just put it in the microwave and *DING*, 4 minutes later you had a hot, creamy and topped with potato and cheese fish pie. The funny thing was, I actually thought I was being healthy because I was eating fish. I didn't even give a second thought to the amount of fat that was in it with all the other ingredients. I would also always add loads more cheese on top, just to make it even unhealthier. The thing is, fish pie can actually be really healthy, it is all about how you make it. That means actually making it and not buying it and putting it in the microwave, which is where I always went wrong.
Although this isn't the quickest meal to make, if you make a big batch of it, it freezes really well, meaning you have healthy homemade meals ready to eat.
You can use any fish you like and I am always changing the fish I use, depending on what is on offer, as fish can be fairly expensive. Another variation you can make with this recipe, is to use sweet potato mash instead, or even a mixture of mashed carrot and swede to give it even more of a veggie boost. Leek and sweetcorn in to this recipe, but again, use any vegetables you like. I would have added peas to it, but unfortunately Mr HHH is allergic to peas (even the smell), so that is out of the question. I really miss peas....
We had this on Christmas Eve and I think I am going to make it again when we have a dinner party, as it is nice to just put the dish in the middle of the table, along with some vegetable side dishes and let everyone serve themselves.
How to make this Healthy Fish Pie - Serves 6:

Healthy Fish Pie

Ingredients
- 1 tbsp skimmed milk
- 1 tbsp corn flour
- 800 g potatoes
- 220 g salmon fillets
- 200 g smoked haddock fillets
- 100 g king prawns
- 250 ml skimmed milk
- 4 tbsp fresh parsley chopped
- 4 tbsp light cream cheese
- 1 Leek sliced
- 4 tbsp Sweetcorn
- 1 tbsp Dijon Mustard
- 2 tbsp fresh Dill chopped
Instructions
- Mix the 1tbsp of milk and cornflour together and set aside.
- Add the potatoes to a pan of boiling water and simmer for 10-12 minutes.
- Put 250ml milk in a pan and put the salmon, haddock and parsley in to it. Bring the milk to the boil and then simmer for 4 minutes.
- Using a slotted spoon, lift the fish out and place in a casserole dish and put the prawns on top and mix round so the fish flakes up.
- Stir the cornflour mix and add to the milk with the sweetcorn, leeks, cream cheese and a pinch of sea salt and black pepper to the milk
- Drain the potatoes and mash them with the Dijon mustard and dill.
- Pour the milk mixture over the fish in the casserole dish and stir, then top with the mashed potatoes.
- Put in the oven at 200C/390F for 45 minutes.
