Green porridge? Yes, I went there! On first look it might look like I have blended avocado in to my porridge (not this time), but it is actually matcha powder that gives this Matcha Porridge it’s wonderful colour.
‘Superfood’ is a bit of a loaded/trendy term isn’t it?! I know some people don’t like it, and it is not my favourite word in the world, but if I were to use it anywhere then it would be in this recipe as this porridge is packed full of nutritious ingredients that are going to give you a big health boost. I am in Las Vegas at the moment and let me tell you, I could do with a big bowl of this right now. Vegas isn’t the healthiest place in the world, that’s for sure!

Recently the Japanese Tourist Board, Visit Japan and the Japan Centre, contacted me about sending me some Japanese goodies to see what recipes I could come up with. I didn’t know what they were going to send, so it was a nice surprise when this arrived.
Along with the Japan guide book (which I am going to read and daydream about my dream trip to Japan), I got sent some Gekkeikan- Sake, Fukujuen Uji-No-Tsuyu Seicha (Tea), Shichimiya (Spices) and some Matcha Green Tea amongst other things. I knew right away that I wanted to make something with matcha, as it has such a bright colour.
All of these ingredients got my creative juices flowing and also made me long to go to Japan even more. But, for the money, I will have to travel via my taste buds and we shall be starting with this Matcha Superfood Porridge.
Not only is matcha a fantastic colour, it has lots of health benefits too, which is why I have added the word superfood to the title of this. It is high in antioxidants, helps you to relax, boosts your memory, increases your energy and adds lots of flavour to foods. I have also added in honey, chia seeds, coconut and pomegranate which have all been labelled with the term superfood in the past and have lots of health benefits.
How to make Matcha Porridge – Serves 1:
- 40 g porridge oats
- 300 ml almond milk
- 1 tbsp chia seeds
- 1 tsp matcha powder
- 1 tbsp honey
- 80 g pomegranate seeds
- 1 tbsp desiccated coconut
- Add the oats, milk and chia seeds to a pan and bring to the boil. Stir in the matcha powder and honey and simmer for 3 minutes.
- Pour in to a bowl and top with pomegranate and coconut.
