Spring has sprung and that means that beige and grey food isn’t dominating our plates and we are eating as much colour as possible. We have kept this vegetarian, but you could easily add some grilled chicken or lamb to bulk this out a bit and make it a filling dinner. But if you want an easy lunchtime option, this is it!
Why is it so easy? That’s pretty much down to the incredible Rotimatic! You might have seen on our Instagram stories that we have been testing it out the last couple of weeks, and we are in love with it. We were in love with it even before reading all the positive reviews online! Rotimatic is set to revolutionise kitchens of the future with robotics and advanced technology. You are in charge of what goes into your roti. All you need is flour, oil, and water. No more hidden additives, chemicals, or preservatives from frozen food. You can add things like spinach or onion powder to the rotis to make different flavour rotis, so things never get boring. Pick every last ingredient, so everything is fresh! The three ingredients are kept fresh in separate airtight containers so you can fill the machine up and forget about them – they are immediately ready for the next time you want to make fresh rotis. We use rotis a lot to go with curry, to dip in things and as an alternative to flatbreads, so knowing that we can make our own healthy version in minutes is awesome. It does take a few minutes to warm up before it starts making them, so it isn’t instant, but that’s fair enough when you think about all the incredible technology that goes in to this machine.

Here’s how to make these Moroccan Vegetable Rotis
Moroccan Vegetable Rotis with Harissa Yoghurt
- 2 Rotis, easily made in a Rotimatic
- 0.5 Courgette, chopped
- 1 Red pepper, sliced
- 1 Yellow pepper, sliced
- 0.5 Red onion, thinly sliced
- 1 Carrot, diced
- 6 Cherry tomatoes, quartered
- 1 tbsp Olive oil
- 2 tbsp Ras-el-hanout
- 4 tbsp 0% Greek yoghurt
- 1 tbsp Harissa
- 2 tbsp Pomegranate jewels
- 1 tbsp Fresh mint
- Heat the oil in a large pan and heat. Add the vegetables and fry gently for 4-5 minutes, stirring frequently.
- Add the ras-el-hanout and mix well and cook for a further minute.
- Mix together the yoghurt and Harissa and spread on the Rotis.
- Top with the cooked Moroccan vegetables and sprinkle with pomegranate and mint before serving.
