Lunchtimes never need to be boring again with these Moroccan Vegetable Rotis with Harissa Yoghurt. Bursting with North African spices, full of colour and a touch of spice, you will never have a boring sandwich again. This lunchtime is made even easier by using a Rotimatic, which is an automatic roti making machine that is our kitchen must have at the moment.
I know I always say that Mexican food is my favourite, but I think Moroccan might be a tie for first, or a very close second. It’s so light and fresh, the spices are incredible and it’s super healthy. Anything with a ton of colour is always a good start when it comes to eating better.

Spring has sprung and that means that beige and grey food isn’t dominating our plates and we are eating as much colour as possible. We have kept this vegetarian, but you could easily add some grilled chicken or lamb to bulk this out a bit and make it a filling dinner. But if you want an easy lunchtime option, this is it!
Why is it so easy? That’s pretty much down to the incredible Rotimatic! You might have seen on our Instagram stories that we have been testing it out the last couple of weeks, and we are in love with it. We were in love with it even before reading all the positive reviews online! Rotimatic is set to revolutionise kitchens of the future with robotics and advanced technology. This automatic roti making machine is quipped with a 32-bit microprocessor running 10 motors, 15 sensors and 300 parts in synchrony. It is a wonder of modern technology and we were totally mesmerised by it whilst making the first 10-20 rotis. This machine makes a roti every 90 seconds!
You are in charge of what goes into your roti. All you need is flour, oil, and water. No more hidden additives, chemicals, or preservatives from frozen food. You can add things like spinach or onion powder to the rotis to make different flavour rotis, so things never get boring. Pick every last ingredient, so everything is fresh! The three ingredients are kept fresh in separate airtight containers so you can fill the machine up and forget about them – they are immediately ready for the next time you want to make fresh rotis. We use rotis a lot to go with curry, to dip in things and as an alternative to flatbreads, so knowing that we can make our own healthy version in minutes is awesome. That’s why for us, it’s a kitchen staple and totally worth the money.
Once the Rotimatic has its flour, oil and water in their compartments, fresh, soft rotis are only a few options and a few minutes away. Simply choose your required thickness, roast level and oil content and press play – Rotimatic automatically measures, dispenses, mixes the ingredients and kneads one dough ball at a time. With the built-in AI technology, it can mimic human judgement to adjust the proportion of flour and water in real time to create a perfect dough ball every time. Once the dough ball is formed, it is rolled over onto the roasting plates and it is cooked to perfection in seconds. It does take a few minutes to warm up before it starts making them, so it isn’t instant, but that’s fair enough when you think about all the incredible technology that goes in to this machine.
It isn’t just rotis that can be made though. Rotimatic was designed as a platform to make any type of flatbread, and you know how much we LOVE flatbread. It connects to the internet and upgrades with features that add more variety to your table. Currently it can make rotis, masala roti, pizza bases and puri, but with its constant updates tortillas, wraps and pitas will be available, which we are super excited about. Taco nights are about to become so much easier with homemade tortillas in our Rotimatic. All made at the touch of a button.
The Rotimatic is quick, mess free (cleaning is very easy and that’s a big plus for us) and economical – less than 5p per roti. If you are looking to eat better on a budget, then this is a great investment. Although there is the initial investment to buy it, when you look at how many different ways it can be used, it is money saving in the long run.
We were incredibly impressed with the Rotimatic and will be using it to make many more rotis, pizza bases and fingers crossed very soon some tortillas. Not only is it a great machine, producing perfect results, it adds a little bit of fun to the kitchen. Over 15 million rotis have been made by Rotimatics around the world so far, and I suspect millions more will be made too. We loved watching everything going round and then minutes later a warm, homemade roti being pushed out of the machine. Two of the biggest challenges with healthy eating are time and convenience and the Rotimatic helps with both of those. Give it a try and order one today – you get a $75 discount when you click through to Rotimatic from here.
Oh, and if you haven’t tried Harissa before, now is the time to try. I think it’s going to be one of the big flavours of 2018 and it’s one of our flavours. It’s a pepper paste, with a little bit of a spicy kick to it and it’s great stirred in to yoghurt to make a sauce or dip.
