I think that most of us always have some kind of pasta and a tin of tomatoes in our cupboard at all times. If you do, that means that you always have a quick and cheap meal available. With a well stocked herb and spice cupboard, then you can easily make that quick meal much more exciting. This Quick Spicy Pasta is both super fast and really tasty.

With everything going on with the book, I am going to be short on time for the next few months, so meals like this are going to be featuring a lot in our house and therefore on the blog.
When we went to Rome for my 30th last year, we found the most amazing market in Campo De Fiori where we bought as much herb and spices as we could fit in our luggage to take home. One of the best things we bought was a arrabbiata seasoning that has transformed so many of our meals. Not just pasta dishes, but added to tomatoey fish dishes, or sprinkled on my poached eggs in the morning.
The arrabbiata seasoning is made up of tomato flakes, garlic, chilli flakes and some parsley, so I have adapted this recipe for those of you that don’t have a bag of the seasoning already and I have included the individual ingredients. But, if you are ever in Rome, go here and stock up! If you don’t go there for the spices, go to meet the awesome guy with the carrot peelers. He is so “famous” that he even has his own You Tube channel showing his hilarious peeling skills.
This quick and easy pasta dish is ready in under 15 minutes, it is low in fat and just 350 calories for a big portion. You can easily adapt it as well, by adding some chicken or fish or adding some extra veggies in to it. Or feta! Add some feta! January has been all about quick and budget friendly meals and this one is a staple in our house. I actually have a bit of a panic if we have run out of spaghetti and tomatoes. My herbs and spices though, they never run low!
How to make Spicy Pasta – Serves 2:
Quick Spicy Pasta
- 100 g pasta
- 2 courgettes (zucchini) peeled into noodles
- 1 tsp olive oil
- 1 onion diced
- 400 g plum tomatoes
- 1 tbsp dried red chillies (less if you don't want it spicy)
- 2 garlic cloves crushed
- 1 tsp dried parsley
- 1 pinch sea salt and black pepper
- Add the pasta to a pan of boiling water and simmer for 12 minutes. Add the courgette in about 4 minutes before the spaghetti is done.
- Heat the oil in a pan and add the onion. Gently cook for 3-4 minutes. Add the tomatoes and smash down with a wooden spoon.
- Add the rest of the ingredients and simmer for 8 minutes.
- Mix the spaghetti and courgette with the sauce and serve.
