I hear so many people say that salads are boring and I just don’t get it. My salads are not boring and I am pretty happy about that. The dressing can really make or break a salad and this roasted red pepper salad dressing really makes a delicious salad. This salad dressing is low in fat and carbs and just 35 calories a serving.

I don’t get what is boring about salads! Veggies are good. Protein is good. Carbs are gooood. (If you heard that in the voice of Joey from Friends describing Rachel’s shepherd’s pie trifle, then you are awesome!) Some healthy fats are good. Dressing is good! Mix all of those things together and you have yourself an epic salad. I have always loved salads though, even when I was 100lbs heavier. It is just then my salads were drowned in mayo and cheese and they were a side dish to something not at all healthy. But even so, I have always loved salads.

I am one of those people that put sauce on everything. I just love my meals to have lots of flavour and sometimes that means drowning my meals in sauces and dressings. This would be a problem if I was using the bottle stuff, but I make all my own sauces and dressings, because they are so quick and easy (not to mention cheaper) and when you have a great little gadget like this Nutribullet, you can get them really smooth too.
This recipe is another one that came from needing too use up some stuff in the fridge and not knowing what to make with it. I love it when that happens! You think that you are just being good and not wasting anything, but you end up creating something that becomes a household favourite. Dave is not the biggest fan of salads (he doesn’t really like any vegetables – I swear we are compatible in many other ways), but cover a salad with this healthy dressing and he definitely doesn’t complain.
I used roasted red peppers out of the jar as they are so much quicker and honestly, there is not much difference. Sometimes we have to pick and choose our battles and I often don’t have time to roast my own. But if you want to, then feel free.
**TIP** If you have any of this leftover, mix it with some cold pasta for a pasta salad. A quick and easy meal to take to work with you.
Ingredients – Serves 6:
– 2 roasted red peppers
– 1 garlic clove, crushed
– 125ml/0.5 cup vinegar (I used red wine vinegar)
– 4 tbsp 0% Greek yoghurt
– 1 tbsp olive oil
– 2 tbsp cold water
– 2 tbsp fresh basil
– A pinch of sea salt and black pepper
1) Put all of the ingredients in to a Nutribullet and blend until smooth.
