Do you go for something filling, or light on Christmas morning? I guess it depends on what time you have your big Christmas dinner. If you are one of those people that has it on the table for midday, then you won’t be wanting a feast for breakfast. But if things are a little slower in your house on Christmas Day and you don’t get around to the main event until mid afternoon then you are going to want something a bit more filling. Especially with all that fizz flowing – you need to line your stomach.
However, that’s the great thing about these Spiced Orange Waffles – they can be a fairly light breakfast or you can stack them up with loads of toppings for something a little heartier to keep you going through the day. We have our Christmas dinner around 1pm, so a couple of waffles and then picking at chocolates sees us through until lunch.
A waffle maker might be one of those things that you don’t think you need in your kitchen, but we use ours every weekend and some weeknights too, as there is so much more that can be done in a waffle maker than sweet waffles. We just can’t get enough of Christmas spices like cinnamon, ginger, cloves and nutmeg at this time of year. It’s sprinkled over our porridge, in our hot chocolates, in our festive muffins and now in our waffles too. These spices go so well with orange and these Spiced Orange Waffles just scream Christmas.
If you can’t bear to have a meal that doesn’t involve chocolate at Christmas time, then feel free to throw in some chunks of dark chocolate in to the batter before cooking. We all know what a delicious combination chocolate and orange is. It wouldn’t be Christmas without a Terry’s Chocolate Orange in your stocking after all!
Spiced Orange Waffles
- 70 g Rolled oats
- 0.5 tsp Baking powder
- 1 Ripe banana
- 1 Egg
- 3 tbsp Milk
- 3 tbsp Fresh orange juice
- 1 Orange (zest only)
- 1 tsp Vanilla extract
- 0.25 tsp Cinnamon
- 0.25 tsp Nutmeg
- 0.25 tsp Ground cloves
- 0.25 tsp Ginger
- 4 tbsp of Greek yoghurt
- Preheat your waffle maker.
- Place the oats in a blender and blend until it makes a powder. Put in a large bowl and add the baking powder and spices.
- Put the banana, egg and milk in a blender and blend until smooth. Add the wet liquid to the oat flour along with the orange juice and zest and mix well, until smooth.
- Grease your waffle maker and using a ladle, add the mixture to your heated waffle maker (it should make 4 waffles depending on the size of your waffle maker), close the lid and cook according to the instructions of your waffle maker. These take around 5 minutes in our waffle maker.
- Serve hot with Greek yoghurt and orange zest on top.
