Another Mexican recipe so soon? I know, but I did say that I was going to make up for the lack of Mexican recipes around here recently and this one is extra good. It's got a good kick of heat (although that can be adjusted), it's a good source of protein, lentils are cheap and it's something a little different too.
It is so good that I have been holding it back from the blog for over a year, because I wanted it to go in to the Hungry Healthy Happy book (aff) and only the best recipes have gone in to the book. I just want to thank you all so, SO much for your support so far with the book(aff). The book went on sale in the UK on Thursday and it is already ranked 1800 out of ALL books on Amazon (apparently there are around 12 million on there) and ranked number 66 in the healthy eating book charts. When we decided to be vegetarian, our first thought (okay, maybe not exactly the first though) was how would it impact Taco Tuesday? Would Tuesdays ever be the same again? Would our tacos now be boring? We worries for nothing as Taco Tuesday is just as awesome as it always was, maybe even better. I am really enjoying getting creative with our taco fillings and this one is a favourite.
How to make these Spicy Lentil Tacos:

Spicy Lentil Tacos


Ingredients
- 1 tbsp olive oil
- 1 small onion diced
- 1 garlic clove crushed
- 90 g red lentils
- 1 tbsp taco seasoning
- 300 ml vegetable stock
- 4 mini tortillas
Instructions
- Heat the oil in a pan over a medium heat and add the onion and garlic. Cook for 3 minutes, stirring continuously, until soft but not coloured, then add the lentils and taco seasoning and cook for 1 minute more.
- Pour the stock into the pan and bring to the boil. reduce the heat to a simmer and leave to cook for 15 minutes until the liquid has dissolved and the lentils are tender.
- Place the tortillas on a plate and spoon over the lentil mixture, add toppings of your choice, then fold the tortillas to form a taco.

I just made a version of this using pancakes rather than tortillas and we had it for lunch. My goodness, it was delicious. We had it with the works, salad, tomato salsa and avocado. Fab idea from your fab book Dannii. I don't think we shall be eating again today!
