I know I have posted this on a few other posts, but Summer is FINALLY here!!! As much as I love Autumn and Winter (don’t look at me like that, I like the cold), there is nothing better than a fresh and full of flavour salad on a hot summer day. Lettuce is full of water, so it is a great way to stay hydrated when you are starting to get bored with guzzling water.
I have a big jar of tahini in my fridge, so I am experimenting with new ways to eat it. I mean, there is only so much hummus I can eat. I usually use Greek yoghurt to add a creaminess to my salad dressings, but I thought tahini would work in the same way and it definitely did.
I never used to be a big fan of fruit on salads, apart from tomatoes of course, but a couple of years ago I got “brave” and had a strawberry and balsamic salad and I have not looked back since. I love putting strawberries, peaches and cherries on my salads and now pomegranate. As well as adding a sweet and fresh flavour to the salad, adding pomegranate gives your salad a different texture. If you normally add croutons or something similar to your salads to add a crunch, try adding pomegranate for the same crunch.
I put this dressing on a chicken salad, but it would go well with any kind of salad – experiment! That is the great thing about salads, just throw everything into a bowl and mix it up and it is a salad. Sure, there are some flavour combinations that are better than others, but you can’t really mess it up.
Ingredients – Serves 2:
– 1 tbsp olive oil
– 2 tbsp cider vinegar
– 2 tbsp lemon juice
– 1 tsp tahini
– 2 garlic cloves, crushed
– Half a tsp red chilli flakes
– Sea salt and black pepper to taste
– Half a pomegranate
1) In a bowl, squeeze a little of the juice out of the pomegranate half and then use a spoon to hit the pomegranate to get all the seeds out. Add them to the bowl with the juice.
2) Add the rest of the ingredients and stir well. You can put it all in a salad dressing bottle and sake it to make sure it is mixed well.
