Mexican Pizza is a fusion of two of the best cuisines in the world. A crisp pizza base smothered in hot and smokey chunky salsa and then scattered with some tomatoes and cheese. Topped off with mashed avocado, sour cream and some onion and herbs. Is your mouth watering yet?

  • 1 Ball of homemade wholewheat pizza dough (or 1 ready made pizza base)
  • 6 tbsp Salsa (heaped)
  • 6 Cherry tomatoes, sliced
  • 60 g Mature cheddar
  • 8 tsp Reduced fat sour cream
  • 8 tsp Guacamole
  • 3 Spring onions, (scallions) thinly sliced
  • A handful of fresh coriander, finely chopped
  1. Roll the pizza dough out roughly 10 inches.

  2. Add the salsa to the dough and spread it out.

  3. Add the cherry tomatoes.

  4. Sprinkle the cheddar on top.

  5. Put in the pizza oven for around 3-4 minutes until the base is crisp and the cheese is bubbling. If you don't have a pizza oven, then put it on a pizza tray and in the oven at 200°C and cook for around 12-15 minutes.

  6. Top the cooked pizza with the sour cream, guacamole, spring onions and coriander.
