Apple and Granola Oat Pancakes
Why have plain pancakes when you can have Apple and Granola Oat Pancakes? Autumnal apples and Nutri-Brex granola makes a breakfast bonanaza.

Servings: 3 people
- 90 g rolled oats, blended in to flour
- 125 ml plain yoghurt
- 125 ml apple sauce
- 2 tbsp coconut oil, melted
- 1 egg
- 2 tbsp maple syrup
- 1 tbsp baking powder
- 1 tsp vanilla extract
- 0.5 tsp cinnamon
- 0.5 tsp ground ginger
- 40 g Nutri-Brex Granola (plus extra for serving)
- 2 small apples (plus extra for serving)
- Greek yoghurt and maple syrup (for serving)
Place all of the ingredients in to a bowl and mix well to form a batter. If it is a little dry still, then add a little milk to thin it out.
Add a little coconut oil or butter in to a pan and then adding a ladle of batter at a time, cook for 1-2 minutes each side and flip. Keep each pancake warm under foil until they are all cooked.
Serve with Greek yoghurt, extra Apple, Granola and maple syrup.
