Chicken Tikka Skewers

Ingredients

Skewers:

  • 800 g Chicken breasts, cut in to chunks
  • 1 pinch Sea salt and black pepper
  • 2 tsp Paprika
  • 2 tsp Cumin
  • 2 tsp Ground cumin
  • 2 tsp Garam masala
  • 1 tsp Garlic powder
  • 1 tsp Turmeric
  • 1 tsp Onion powder
  • 1 tsp Mild chilli powder
  • 4 tbsp 0% Greek Yoghurt
  • 0.5 Lemon (juice only)
  • 1 Red onion, cut in to chunks
  • 1 Yellow pepper, cut in to chunks

Raita:

  • 8 tbsp 0% Greek yoghurt
  • 1 Garlic clove
  • 0.5 Lemon (juice only)
  • 1 handful Fresh mint, chopped
  • 1 handful Fresh coriander, chopped
  • 0.25 Cucumber, grated and squeezed

To serve:

  • Mango chutney

Instructions

  • Put the chunks of chicken breast in to a large bowl.
  • In a separate bowl, mix together all the tikka seasoning ingredients.
  • Add the yoghurt, tikka seasoning and lemon juice to the chicken and mix well. Put in the fridge for at least 30 minutes.
  • Thread the chicken on to 8 wooden skewers (which have been soaking for 30 minutes to avoid burning) along with some chunks of red onion and yellow pepper.
  • Cook under the grill (broiler) at a medium heat for 15-20 minutes, turning often, until the chicken is cooked through.
  • Serve with a salad, the raita and some mango chutney (optional).

Notes

  • You can make these ahead of time and it actually intensifies the flavour leaving them in the fridge for a few hours.
  • These are fairly mild, so if you prefer things spicier then add some more chili powder to the seasoning.
  • Some cubes on paneer go really well on these skewers.
