Egg Baked in Avocado

Why not use the avocado as a bowl, and crack an egg in to it and make this Egg Baked in Avocado. It’s a breakfast that is bursting with protein and healthy fats!

Ingredients

  • 1 avocado
  • 2 eggs
  • Sea salt and black pepper

Instructions

  • Slice the avocado in half and remove the stone. Keep the skin on, as you will be baking it in the skin.
  • Scoop out some of the flesh of each half, to make room for the egg.
  • Crack an egg into each half and sprinkle over a little salt and pepper
  • Put in a oven that is preheated to 200°C and bake for around 15 minutes - the whites should be set and the yolk a little runny.
  • Serve with some toast and a sprinkle of onions and red chilli (optional)
