Chicken and Cheddar Guacamole burgers

These Chicken Guacamole burgers are a much leaner option than most burgers and they are packed full of healthy fats too. Ditch the drive-thru and try making these instead.

Ingredients

Burgers:

  • 300 g Chicken breasts, ground into mince
  • 0.5 Small onion, very finely diced
  • 2 Cloves of garlic, crushed
  • 1 pinch Sea salt and black pepper
  • 1 Lime (juice only)
  • 4 tbsp Fresh coriander (cilantro)
  • 1 Jalapeno, finely chopped (optional)
  • 45 g Wyke Vintage¬†Cheddar, grated
  • 4 Wholewheat burger buns
  • Salad and red onion to serve (optional)

Guacamole:

  • 1 Avocado
  • 1 Lime (juice only)
  • 4 tbsp Fresh coriander (cilantro), chopped
  • 0.25 Small red onion, finely diced
  • 1 Jalapeno, finely chopped (optional)
  • 1 Small tomato finely taste
  • 1 pinch Sea salt and black pepper

Instructions

  • Put all of the burger ingredients in a bowl and mix well and form in to 4 burgers. Put in the fridge for 30 minutes before cooking.
  • Heat some oil in a pan and then add the burgers. Cook for around 5 minutes each side, until cooked through.
  • Make the Guacamole my mashing up the avocado and mixing through the rest of the ingredients.
  • Toast the burger buns and add the burgers, onion, lettuce and Guacamole and serve.
