Vegetarian Pad Thai

Ingredients

  • 300 g flat rice noodles
  • 1 red pepper thinly sliced
  • 2 courgettes zucchinis, make in to noodles
  • 1 carrot thinly sliced in the sticks
  • 1 tbsp Olive oil
  • 2 tbsp Soy sauce
  • 1 tbsp Honey
  • 1 Lime (juice only)
  • 1 tsp Red chillies, chopped
  • 2 Cloves of garlic, crushed
  • 3 British Lion eggs, ┬ábeaten
  • 4 tbsp Fresh coriander cilantro, chopped
  • 2 tbsp Peanuts, chopped
  • 2 Spring onions, chopped

Instructions

  • Heat the oil in a pan and add the red pepper and carrot and gently cook for 4 minutes.
  • Meanwhile, mix the soy sauce, honey, lemon juice, chilli and garlic together in a bowl and set aside.
  • Add the noodles and courgette noodles to the pan of vegetables and gently cook for 2 minutes. Add the sauce and mix well.
  • Move to one side of the pan and then pour the egg mixture in and gently cook for 2 minutes and then break it up and mix with noodles.
  • Serve in to bowls and sprinkle with the coriander, peanuts and spring onions.
