Stuffed French Toast

French toast is definitely a bit of a treat for breakfast, but this version is even better! This Banana and Almond Butter Stuffed French Toast makes a fantastic breakfast, and also perfect for feeding a crowd!

Ingredients

  • 4 slices briocheĀ loaf
  • 1 banana sliced
  • 3 tbsp almond butter
  • 1 medium egg
  • 1 tbsp vanilla extract
  • 0.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp butter

Instructions

  • Spread the almond butter on each slice of bread
  • Divide the banana slices between 2 slices of bread and put the other slices of bread on top to form 2 sandwiches. Pinch round all the sides to close the edges.
  • Whisk together the egg, vanilla, cinnamon and nutmeg.
  • Dip each sandwich in the egg mixture until each side is coated.
  • Fry in a hot pan that has a little butter in it and cook for 90 seconds each side.
