Breakfast Flatbread

Who says that you can't have pizza for breakfast? This Spinach and Tomato Breakfast Flatbread will feel like eating pizza, but it's still packed full of protein with a vegetable boost too. Now, that's the best way to start the day!

Ingredients

  • 1 large flatbread
  • 4 tbsp Cirio tomato puree
  • 50 g spinach chopped
  • 5 cherry tomatoes halved
  • 2 eggs
  • 1 pinch sea salt and black pepper

Instructions

  • Spread the Cirio tomato puree over the flatbread and scatter the spinach on top.
  • Gently crack the eggs on to the flatbread, add the tomatoes and add some salt and pepper
  • Put in a preheated oven at 200C for 10 minutes, until the eggs are set.
