Creamy Chicken Spinach Pasta

To make sure that I am eating enough fruit and vegetables, as well as eating wholegrains and this Creamy Chicken Spinach Pasta includes all three.

  • 300 g Wholewheat Pasta
  • 2 chicken breasts
  • 150 g spinach finely chopped
  • 6 tomatoes diced
  • 8 shallots diced
  • 4 garlic cloves crushed
  • 100 g light cream cheese
  • 100 ml skimmed milk
  • 4 tbsp 0% Greek yoghurt
  • 1 pinch sea salt and black pepper


  • Put the chicken under the grill and cook for 20-30 minutes, until the chicken is cooked through. Cut in to chunks and set aside.
  • Add the pasta to a pan of boiling water and simmer for 12 minutes.
  • Heat a little oil in a large pan and add the shallots and garlic and cook for 4 minutes. Add the spinach, cream cheese, milk, yoghurt and salt and pepper and heat very gently for 2 minutes.
  • Drain the pasta and add to the spinach mix and add the chicken and tomatoes too. Stir well and put in a preheated oven at 200C for 20 minutes.
